🔥 Remove stale docker.yaml workflow, superseded by build.yml 🔥 
- .gitea/workflows/docker.yaml: deleted — unpinned action tags (@v2-v4),
  single-registry DockerHub push, no OCI annotations, fired on every push.
  build.yml is the current SHA-pinned, dual-registry, OCI-annotated
  replacement (main-only push + monthly cron + manual dispatch).
